Stuffed Breakfast Biscuits #Recipe

In trying to change up the breakfast offerings around our house, I went on the hunt a few months ago for great braakfast recipes on the Internet. As usual my search didn’t let me down. I found this awesome recipe on Yummy Mummy Club and it is hands down my family’s favourite breakfast treat lately. I have also made it for friends and they have loved it and of course asked for the recipe.  So here you go….

Stuffed Breakfast Biscuits 

Breakfast biscuits

What you will need: 
1 package of Pilsbury biscuits
5 slices of bacon
5 cheese slices
4 eggs

How to make them:

Cook bacon until crispy

Whisk the eggs with a little bit of milk and scramble them in a fry pan

Roll out biscuits

Top biscuits with toppings

Close up biscuits by folding in the edges so they are now balls

Brush each biscuit with a little olive oil and sprinkle with a bit of pepper

Place in muffin tins

Cook for 13 mins at 375

Place on cooling rack for a few minutes

I love the concept of these stuffed biscuits and have thought about how to change it up.  For breakfast you can change out the bacon for sausage or ham, leave out the egg completely or throw in veggies to make it an omelet biscuit.  The options are endless and aren’t just reserved for breakfast.

Here are some other ideas I have for fillings…

Tacos – ground taco beef, cheese, tomatoes – dip in salsa and sour cream

Pulled pork & cheese

Ham & Cheese

Thanksgiving – Fill with leftover turkey and stuffing and serve with gravy or cranberry sauce

Polish – Fill with cut up sausages and pieces of pierogis
