Sundried Tomato Pesto Chicken with Feta #Recipe


This is a family favourite chicken recipe in our house and it will be in your house too!  The whole family will love the taste and Mom will love how easy it is to make.


What you will need:

Chicken Thighs (boneless/skinless)  – I use about 12

Jarred Sundried tomato pesto

Container of feta cheese

1/4 cup EVOO

How you make it:

Layered trimmed chicken thighs in a 9×13 glass baking dish.

Mix sundried tomato pesto with 1/4 cup EVOO

Cover chicken with pesto mixture

Top chicken with crumbled feta

Cover with foil and bake at 400 for 40 minutes


Serve with a side of rice, salad or whatever you fancy.  The best part of this recipe is that you may even have enough for leftovers the next day.  Chop up all the leftovers and serve over pasta for some extra yumminess.  Enjoy!!
