Aero Chocolate Chip Cookie #Recipe

These yummy cookies made with Nestle Aero chocolate bars are sure to quickly become one of your family’s favourite cookies!  Raid your kid’s Hallowwen candy (or shall I say what’s left) and find all their mini Aero bars

What you’ll need

1/2 cup white sugar

1/2 cup brown sugar

1/2 cup softened butter

1 egg

1/2 tsp vanilla extract

1/2 cup instant oats

1 cup all-purpose flour

1/4 tsp salt

1/2 tsp baking soda

1/2 teaspoon baking powder

3/4 cup semi sweet chocolate chips

10 mini Aero bars (chopped into small pieces)

How to make them

Preheat oven to 375 degrees

In a large bowl mix together butter and sugars and cream together

Beat in egg and add vanilla

In a separate bowl, mix together oats, flour, baking soda, baking powder and salt

Mix dry ingredients into butter/sugar mixture

Add chocolate chips and Aero bits into mixture

Scoop cookie mixture onto baking sheet with a teaspoon

Cook for 8-10 mins

Stuffed Breakfast Biscuits #Recipe

In trying to change up the breakfast offerings around our house, I went on the hunt a few months ago for great braakfast recipes on the Internet. As usual my search didn’t let me down. I found this awesome recipe on Yummy Mummy Club and it is hands down my family’s favourite breakfast treat lately. I have also made it for friends and they have loved it and of course asked for the recipe.  So here you go….

Stuffed Breakfast Biscuits 

Breakfast biscuits

What you will need: 
1 package of Pilsbury biscuits
5 slices of bacon
5 cheese slices
4 eggs

How to make them:

Cook bacon until crispy

Whisk the eggs with a little bit of milk and scramble them in a fry pan

Roll out biscuits

Top biscuits with toppings

Close up biscuits by folding in the edges so they are now balls

Brush each biscuit with a little olive oil and sprinkle with a bit of pepper

Place in muffin tins

Cook for 13 mins at 375

Place on cooling rack for a few minutes

I love the concept of these stuffed biscuits and have thought about how to change it up.  For breakfast you can change out the bacon for sausage or ham, leave out the egg completely or throw in veggies to make it an omelet biscuit.  The options are endless and aren’t just reserved for breakfast.

Here are some other ideas I have for fillings…

Tacos – ground taco beef, cheese, tomatoes – dip in salsa and sour cream

Pulled pork & cheese

Ham & Cheese

Thanksgiving – Fill with leftover turkey and stuffing and serve with gravy or cranberry sauce

Polish – Fill with cut up sausages and pieces of pierogis

Sundried Tomato Pesto Chicken with Feta #Recipe

This is a family favourite chicken recipe in our house and it will be in your house too!  The whole family will love the taste and Mom will love how easy it is to make.

What you will need:

Chicken Thighs (boneless/skinless)  – I use about 12

Jarred Sundried tomato pesto

Container of feta cheese

1/4 cup EVOO

How you make it:

Layered trimmed chicken thighs in a 9×13 glass baking dish.

Mix sundried tomato pesto with 1/4 cup EVOO

Cover chicken with pesto mixture

Top chicken with crumbled feta

Cover with foil and bake at 400 for 40 minutes

Serve with a side of rice, salad or whatever you fancy.  The best part of this recipe is that you may even have enough for leftovers the next day.  Chop up all the leftovers and serve over pasta for some extra yumminess.  Enjoy!!

Mini Bacon & Cheese Stuffed French Toast

Not going to lie, hubby is usually the big breakfast maker at our house … Until now!  I now wear the crown for making the kid’s fave breakfast.  Simple and cute, these mini stuffed french toasts are sure to be a hit with your little (and big) kids.

Here’s what you’ll need:

  • Sliced French stick (or two)
  • Cheese (sliced)
  • Cooked bacon strips (1 pack)
  • Eggs
  • Milk
  • Cinnamon to taste

Preheat non-stick pan or griddle to 250 or medium heat

Mix 2 eggs, 1/4 cup milk and a teaspoon of cinnamon in a shallow pie plate

Start forming the sandwiches – bread, slice of cheese, half slice bacon, slice of cheese, bread

Once all sandwiches are assembled, dip both sides of bread in your egg mixture and place on cooking surface

Cook each sandwich about 2-3 minutes per side, until a little crispy and cheese has melted enough to hold the sandwich together

Serve with a side of maple syrup for dipping

This is a super yummy (and easy) recipe that your family is sure to love and your little ones will have fun helping you make.

Fresh Peach Crisp

(Apples works great in this recipe too)

Peach crisp

 1 cup rolled oats      
3/4 cup brown sugar
1/2 cup all purpose flour
1 tsp. cinnamon
1/2 cup melted butter
10 medium peaches or apples

In a bowl, mix together oats, sugar, flour, cinnamon.  Once combined slowing mix in melted butter until the dry mixture becomes crumbly.  Chop up fruit and place in baking dish and cover with topping.  Bake at 350 for 40 mins

– Placing ingredients in the baking dish

– Spreading on the topping
